1} Preheat oven to 350 degrees Fahrenheit.

2} Have handy a pair of scissors.

3} Take out a 9-inch skillet with its lid.

4} Cut enough parchment paper to line the skillet with it.

5} Place the parchment-lined skillet (without its lid) into the oven that’s preheating.

For The Second Thing
Have ready a small bowl, a mini blender machine with its cup plus measuring spoons of 1/8 teaspoon, ¼ teaspoon (2 of these), a ½ teaspoon (3 of these), a ½ tablespoon, a 1 tablespoon (3 of these), a 2 quart pot, a ¾ cup measure, a 1 cup measure and a serving spoon… the latter is for scooping the lentils into the measuring cups.

Now, we’re ready to rock and roll in the kitchen!
6} In both the bowl (for the salmon) and the blender cup (for the lentils), put:

Black peppercorns, freshly grind them… ¼ plus… 1/8 teaspoon

Salt, fine grain… ½ teaspoon

Now, For The Third Thing
Here’s where things change a bit.
7} In the bowl with the salt and pepper, put:

Now, place your attention on the blender cup.
8} In the blender cup with the salt and pepper, put:

Lemon or lime zest, ½ plus… ¼ teaspoon

Lemon or lime juice, 1½ tablespoons

It’s Time For Lentils
9} In a 2 quart pot, put:

Water, filtered… ¾ cup

French lentils, cooked… 2 cups plus… 2 tablespoons

10} In the 2 quart pot… Uncovered and over a low to medium heat, warm the lentils.

Mise en Place
Here’s what your kitchen counter needs to have on it.
Get ready a ¾ cup measure, a 1 tablespoon measure, a serving spoon, spatulas (1 for scooping out the lentil puree and 1 for lifting out the salmon fillets), a cutting board and sharp chef’s knife, the thawed salmon fillets, the bowl of oil and spices, a fork, a trivet, an oven mitt, the mini blender base with its cup plus 2 kitchen timers.

We’re Moving & Grooving
11} Have each one of the kitchen timers ready to countdown… Set one for the 7½ minutes, and set the other one at the 1 minute mark.

12} Lay the salmon fillets out on the cutting board.
13} With a sharp chef’s knife… trim the salmon so that the thinner pieces have been separated from the pieces that are thicker.
14} With a fork, mingle the oil and spices that are in the bowl.
15} Use an oven mitt, remove the skillet from the oven and place the hot skillet onto the trivet.

16} Coat both sides of each salmon piece with the oil and spice mélange, and as you coat each piece… place each piece into the hot parchment-lined skillet skin side down.
17} Lid the skillet, make sure the oven is at 350 degrees Fahrenheit with the use of an oven thermometer and place the skillet in the oven a little above the middle rack.
18} Have one of the kitchen timers count down the 7½ minutes.

Focus Your Attention Elsewhere
19} Bring the water (for the lentils) to a full boil, and while you’re waiting for this to happen… stir the lentils.

20} Set up all of the dishes you need to serve the meal.
21} Three minutes prior to serving the thinner salmon fillets… Place the hot water and lentils into the blender cup with the oil, citrus juice/zest and spices.
22} As you puree the lentils, oil, citrus juice/zest, spices and hot water… hold down the lid to the blender cup.

23} With 1½ minutes left… Onto each of the 2 plates, place half of the warm lentil puree. This is a ¾ cup plus 2 tablespoons.

Go Fish
24} After the 7½ minutes, remove the skillet from the oven.
25} Place the thinner portions of salmon onto each plate (skin side down)… atop the lentil puree, and return the skillet (lidded) to the oven for 1 minute.
26} Have the kitchen timer count down the 1 minute.
27} Remove the skillet from the oven, turn off the oven and place the thicker portions of salmon onto each of the 2 plates (skin side down)… atop the lentil puree.
28} Eat & Enjoy!
